Red Wine Biscotti

2 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 cup dry red wine
1/2 cup olive oil
1 egg white
2 tablespoons sesame seeds

Oven 350F. Mix flour, sugar, baking powder, salt, pepper. Add
wine and oil and stir just until smooth. Divide dough into 4
pieces. Shape into 10" logs, brush with egg white, sprinkle with
sesame seeds. Cut logs into 3/4" slices. Ungreased baking sheets,
25 minutes or lightly browned. Cool.

While the taste wasn't bad, there is WAY too much olive oil in the recipe. The texture is more like shortbread than biscotti. Try 1/4 cup of oil instead.

These biscotti were simple to prepare and taste amazing. I made them (as well as several other types) over the holidays and these were by far my favorite. They have an interesting flavor (not bad interesting, but GOOD interesting) and the black papper adds another dimension. The texture is absolutely perfect--a perfect crumb and the right amount of hardness. Sprinkling sesame seeds on top make them more beautiful. The deep aubergine color is perfect as well. I considered adding a little whole wheat flour, but never tried it. They're also not that unhealthy!
