1 cup applesauce 2/3 cup sugar 4 eggs 2 teaspoons vanilla extract 1 cup flour 2/3 cup cocoa 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup chocolate chips
Preheat oven to 350*F. Spray a 13 x 9- inch baking pan with Pam cooking spray. In a large bowl, mix together the applesauce and sugar until well combined. Beat in the eggs one at a time. Then mix in the vanilla. Add the flour and the cocoa; beating well, then add the baking powder and salt. Stir in the chocolate chips and stir to combine all mixing well. Pour batter into prepared pan and bake at 350 degrees F for 28 minutes.
Note: Do not overbake, or brownies will not be fudgy. Cool completely before cutting. Store in refrigerator.

fudge brownies Low Fat, January 21, 2004 - 07:00 AM
Reviewer: Ella Seltzer from Ramat Beit Shemesh, Israel
the recipe was easy to prepare (one bowl, by hand) and baked evenly. Mine, however were not quite fudgy enough but perfectly passable. Not bad for a low-fat recipe. I don't think my kids would notice the difference.
