Chess Cake

1 box cake mix, white or yellow
1 stick butter
1 egg, beaten
1 package cream cheese
3 eggs
1 box powdered sugar
1 teaspoon vanilla
1 can Dark Sweet Cherry Pie filling (optional)

Mix cake mix, butter, and beaten egg together and press into a 9
X 13 inch greased baking pan. Beat cream cheese, eggs, powdered
sugar, and vanilla and pour over cake mix batter. Bake in a
preheated 325 oven for 30 to 40 minutes.

Cut into squares or top with pie filling.

I've tried this chess bar recipe several times and keep coming back to it. Its the best I've found on-line so far. It's definitely rich and fattening. You can cut the calories by using non fat cream cheese and egg substitutes. I tried low fat cream cheese and substituted one of the eggs for the powdered egg whites and added 2 tbsp water and didn't miss the fat. Overall this is quite easy to make and tasty. I like to substitue the yellow cake mix for chocolate or lemon to get a new flavor now and then. I recommend this recipe. You also might consider using a pre-made graham cracker crust instead of cake mix and there is less to prepare and clean up! Enjoy it. :-)
