Coconut Bars

1/2 cup butter or margarine, at room temperature
1 cup sugar
1 whole egg + 1 egg yolk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1/2 teaspoon vanilla extract

1 egg white, beaten until foamy
1 cup firmly packed brown sugar
2/3 cup flaked dried coconut
1/2 teaspoon vanilla extract

Preheat oven to 350. In a bowl and using an electric mixer, cream
together butter, sugar, and whole egg and egg yolk. In another bowl
or on a piece of waxed paper, mix together flour, baking powder,
and salt. Add flour mixture, milk, and vanilla to butter mixture
and mix well. Spread batter in an oiled 8 inch square pan or baking
dish. (Batter will be thick).

To make meringue, in a small bowl stir together egg white, brown
sugar, coconut, and vanilla. Spread mixture evenly over batter.

Bake until golden on top and toothpick inserted in center comes
out clean, 30-35 minutes. Cool on wire rack, then cut into bars to
serve. Makes 12 bars.
