Date Squares
1 cup brown sugar
1 3/4 cups rolled oats
1 1/2 cups flour
pinch salt
1 tsp baking powder
3/4 cup shortening
1/2 lb dates, cut up
1/2 cup sugar
1/2 cup water
Make filling - Mix together dates, sugar and water in a sauce pan.
Bring to a boil and boil until dates are soft and mixture thickens
- about 4 minutes. Cool. Combine all dry ingredients; mix well.
Cut in shortening until mixture resembles coarse crumbs. Line
greased rimmed cookie sheet (9 x 13) with half of mixture. Carefully
spread cooled filling on top of rolled oat mixture. Top with
remaining oat mixture and press down. Bake at 325F about 25
minutes.
