United Kingdom Flapjacks

4 ounces demerara sugar
4 ounces butter or margarine
3 tablespoons golden syrup
6 ounces porridge oats
2 ounces desiccated coconut
1 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten

Put the sugar, butter or margarine and golden syrup in a saucepan
and heat gently until melted. Remove from the heat and stir in the
remaining ingredients.

Press the mixture into a shallow greased 8 inch square baking tin
and bake in a moderate oven (350 F/Gas Mark 4) for 20 to 30 minutes
or until golden and firm to the touch.

Remove from the oven and leave for 5 minutes, then mark into squares
and leave to cool. When completely cold, loosen with a palette
knife and lift each square carefully from the tin.
