Ginger Bar Cookies

2 1/4 cups unbleached flour
1/2 cup packed light brown sugar
1 tablespoon ground ginger
1/2 teaspoon baking powder
Pinch salt
1 cup (2 sticks) unsalted butter, cut into pieces and slightly softened
1/2 cup fine-chopped crystallized ginger

Combine flour, brown sugar, ginger, baking powder and salt in mixing
bowl. Add butter and cut in with pastry blender until mixture
resembles fine crumbs. Add crystallized ginger and stir with fork
until blended.

With lightly floured fingertips, press dough in even layer into
lightly butter ed 13-by-9-by-2-inch baking pan. Bake at 350 degrees
on center rack 20 minutes or until edges are lightly browned. Cool
in pan on wire rack before cuttinci in to bars. Make ahead and
freeze or wrap in foil and store at room temperature up to 1 week.
Makes 24 bars.
