Lemon Cheese Bars
1 Duncan Hines Pudding Yellow Cake Mix (or any yellow cake mix with pudding)
8 oz. pkg. cream cheese, softened
1/3 c. sugar
1 tsp. lemon juice
1/3 c. oil
2 eggs, regular
Mix dry cake mix, 1 egg and 1/3 c. oil until crumbly; reserve 1
cup. Pat remaining mixture lightly in an ungreased 13X9X2 pan.
Bake 15 minutes at 350F.
Beat cheese, sugar, lemon juice and 1 egg until light and smooth.
Spread over baked layer.
Sprinkle with reserved crumb mixture. Bake 15 minutes longer. Cool.

I was in a pinch (as usual) and needed a quick dessert. I had all the ingredients on hand, so this fit the bill perfectly. My mother brought a pan to feed hungry teenagers and they disappeared in a snap.
