Lemon squares
3/4 c. butter or margarine
3/4 c. powdered sugar
1 1/2 c. flour
3 Tbs. fresh lemon juice (1/2 lemon)
grated rind of 1 lemon
3 eggs
1 1/2 c. sugar
3 Tbs. flour
1 tsp. baking powder
chopped nuts optional
Mix butter, sugar and flour until crumbly (fingers work the best);
pat mixture into 9 x 13" pan; bake at 350 degrees 12 minutes.
Mix together lemon juice, rind, eggs, sugar, flour baking powder
and nuts.
Pour over baked and cooled crust and bake 15-20 minutes at 350F.
Sift powdered sugar over top after baked. Cut into pieces while
still somewhat warm.
