Lemon Squares
1 cup flour, sifted
1/2 cup butter
1/4 cup confectioner's sugar
2 eggs
1 cup granulated sugar
1/2 tsp baking powder
1/3 tsp salt
1/4 cup fresh lemon juice
1 Tbsp lemon rind, grated
Preheat oven to 350 degrees. Blend flour, butter and confectioner's
sugar thoroughly. Press the dough evenly in an 8x8 glass baking
dish. Bake for 20 minutes. Beat the remaining ingredients together.
Pour mixture over crust and bake for 20-25 minutes. Let cool and
cut into squares.
Caution: do not over-bake.
