Mud Hen Bars
1/2 cup margarine
1 cup sugar
1 egg
2 eggs, separated
1 1/2 cups flour
1 Tsp. baking powder
1/4 Tsp. salt
1/2 cup chocolate chips
1 cup miniature marshmallows
1 cup brown sugar
Cream margarine and sugar. Add egg and 2 yolks. Add flour, baking
powder and salt; mix well. Spread batter into a 9" x 13" pan that
has been lightly coated with cooking spray. Sprinkle chocolate
chips and marshmallows over the batter evenly. Beat 2 egg whites
until stiff; fold in brown sugar. Spread mixture over over top of
chips and marshmallows. Bake in a preheated 350 deg. oven for 30-40
minutes or until golden brown on top.
