Pumpkin Bars with Cream Cheese Frosting

2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/4 tsp salt
4 eggs
15 oz can pumpkin
1 2/3 cup sugar
1 cup cooking oil
1 cup chopped pecans (optional)

2 3-oz pkgs cream cheese, softened
1 stick butter (1/2 cup), softened
2 tsp vanilla
3 cups powdered sugar

24 whole pecans for garnish (optional)

In a medium bowl combine flour, baking powder, baking soda, salt
and cinnamon. Set aside. In a large bowl beat together eggs,
pumpkin, sugar and oil. Add dry ingredients. Beat well. Add chopped
pecans (if desired). Spread in a 15 x 10 x 1 inch, greased baking
pan. Bake in a 350 degree oven for 25-30 minutes (until golden
brown or till toothpick inserted in the center comes out clean).
Cool completely before frosting. Combine first three frosting
ingredients. Gradually add powdered sugar till smooth (spreading
consistency) You can use between 3 and 4 cups of powdered sugar.
Spread on cooled cake. Cut into bars and garnish each with a whole
pecan. Makes about 24 bars. Store in the refrigerator. These taste
best cold!
