Shortbread 12

Whipped Shortbread
Yield: 3 dozen
1 c butter
1/2 c icing sugar
1 1/2 c flour
1/2 c red or green glace cherries
Preheat oven to 325. Combine butter, sugar and flour and mix until
light and fluffy. Drop by teaspoonfuls onto ungreased cookie sheet
or you can use an icing bag. Decorate each cookie with a 1/2 of
cherry. Bake at 325 for 15 to 20 minutes or until lightly browned.
Remove to a rack to cool.

Well worth the ease of preparation for the light, rich, crumbly result. Even better with melted chocolate or choc chips on top !
