Shortbread Cookies

1/2 cup sugar
1 cup butter, softened
2 cups flour
4 tablespoons cornstarch
3 tablespoons sugar

Preheat oven to 350 degrees. Combine the sugar and butter, beat
until light and fluffy. Combine the flour and cornstarch, then
add to the butter mixture; mix well. Divide your dough into 18
equal pieces. Shape into balls and roll each ball in the sugar.
Place the balls of dough 2 inches apart on an ungreased cookie
sheet. For each cookie, flatten the ball of dough firmly with a
cookie stamp or use the bottom of a glass. Bake for 9 - 12 minutes
or until bottoms are light golden brown. Cool for one minute and
remove from cookie sheets. Makes 18 cookies.
