Whipped Shortbread
1 lb. butter (not margarine) 1 cup cornstarch 1 cup powdered sugar 3 cups flour
Beat butter untill fluffy, beat in cornstarch and sugar, then blend in flour. Form dough into walnut size balls, roll in colored sprinkles, place on ungreased cookie sheet and flatten slightly with fingers or bottom of glass. Bake at 350 for 12 minutes, but not until brown.
I vary the sprinkles according to the season: red and green mixture for Christmas, red and white mixture for Valentine, orange and chocolate for Halloween, etc. For taste, my least favorite are the chocolate ones and my favorite are the multicolored non-pariels (tiny little balls).
