Brownies

1 cup butter
8 oz (250g) unsweetened chocolate
1 1/2 tbsp instant coffee powder
1 tsp vanilla
6 eggs
1/2 tsp salt
3 cups granulated sugar
1 1/2 cups cake and pastry flour
1 1/2 cups chopped walnuts

Grease a 10x15-inch jelly roll pan. Melt butter and chocolate on
top of double boiler over simmering water. Stir in instant coffee
until dissolved. Stir in vanilla. Cool mixture to lukewarm.

Beat eggs in large bowl with electric mixer until fluffy. Add salt.
Gradually add sugar; continue beating until mixture is very thick
and forms a ribbon. On lowest speed of mixer, quickly add chocolate
mixture. Add flour, then nuts, mixing just to combine after each
addition. Spread evenly in prepared pan; bake in pre-heated 350F
oven 25-30 minutes until brownies are set and crusty on top. Cool
in pan.

Makes about 40 brownies.
