TRIPLE CHOCOLATE-BUTTERSCOTCH BROWNIES
4 ounces unsweetened chocolate, finely chopped 1/4 cup unsalted butter, softened 1 1/2 cups granulated sugar 4 large eggs 1/2 teaspoon vanilla extract 1/2 teaspoon coconut extract 2 ounces white chocolate, chopped into small pieces 2 ounces bittersweet chocolate, chopped into small pieces 2 ounces milk chocolate, chopped into small pieces 2 ounces butterscotch chips 1/4 teaspoon salt 3/4 cup plus 1 tablespoon all-purpose flour, sifted 2 tablespoons cocoa powder
Preheat oven to 325 degrees. Melt unsweetened chocolate in a double boiler over hot water, making sure that the water does not touch the bottom of the pan holding the chocolate. Whisk until smooth. Mix butter and sugar together. Stir in eggs, 2 at a time and mix just until they begin to blend. Stir in melted chocolate. Add vanilla extract, white, bittersweet and milk chocolate pieces. Add salt, cocoa powder and flour. Spread batter into buttered and floured 9-inch square baking pan. Bake about 35 to 40 minutes. Do not overbake.
