Boiled Peanuts

1 1/2 quarts green uncooked peanuts
1/2 cup salt
2 1/2 quarts water

Wash Peanuts until water runs clear. Put clean peanuts in crockery
pot, add salt and water; stir. Cook, covered, on high for 5 to 7
hours. Add additional water during cooking, if necessary, to keep
peanuts covered.

I grew up down South, but I got suckered into moving to Pittsburgh, PA. This is the first time I've eaten boiled peanuts in years! It's amazing how easy they are to cook, and the taste is excellent. To make this recipe spicy like I remember it just add some Zatarain's shrimp and crab boil to the water. If you can't find Zatarain's, try your favorite brand. I used about half a package for mild, and a whole package for spicy. Another good addition is some cayenne pepper, or a small jar of jalapenos. Experiment with and enjoy a true Southern treat!
