Chili

1 lean pork roast cut into cubes
2 cans chicken broth
1 fresh tomato diced
1 onion diced
1 can whole green chilis (not jalapenos) rinsed, seeded and chopped
or fresh roasted anaheims can be substituted
3 large cloves garlic, chopped
1/2 teaspoon oregano
salt to taste
1 can hominy (optional)

Brown pork slightly in a tablespoon of oil.

Cook all day in crock pot. This green chili will be very thin and
soupy. We love it this way, but sometimes for a change of pace,
I add a cup of instant rice at the end of cooking time, cover and
let sit 5 minutes and then serve topped with cheese and serve in
a bowl or stuffed in tortillas.
