Fruit and Vegetable Curry

1 tbsp oil
1 chopped onion
1 tbsp flour
1 tsp yeast extract
4 sticks chopped celery
Juice and rind 1 lemon
1 tbsp curry powder
250ml white stock or water
1 tsp ginger
3/4 cup dried apricots
100g raisins
2 bananas thickly sliced
125g sour cream
400g cooking apples, peeled, quartered

Heat oil in frying pan. Fry celery and onion until lightly coloured.
Stir in curry and flour and cook gently a few minutes. Gradually
stir in liquid with yeast extract and ginger. Place in crockpot
with lemon juice and rind, apricots, bananas, apples and raisins.
Stir thoroughly. Cook on low 4-6 hours, or high 2-3 hours. Just
before serving stir in sour cream. Serve with plain rice and peanuts.
