Crockpot Lentil-Vegetable Soup Yield: 8 Servings 2 cups lentils, presoaked and drained 5 cups water 2 slices bacon, diced 1 sOnion, chopped 1 carrot, thinly sliced 2 celery stalks w/tops, sliced 1 garlic clove, minced 2 1/2 tsp salt 1/4 tsp pepper 1/2 tsp oregano dried & crushed 1 can tomatoes (450g, 1 pound) in juice 2 tbsp Wine vinegar Put all ingredients in Slow Cooker (Crockpot). Mix together well. Cover and cook on low 8 to 10 hours. Before serving season to taste.
