SPICED PORK STEW
2 med onions, cut in 8ths 1/4 c. raisins 2 cloves garlic, minced 1 bay leaf 1 cinnamon stick (about 2" long) 2 lbs boneless pork, trimmed of fat and cut in 1" cubes 3 tbls flour 2 tsp ground cumin 2 tbls firmly packed brown sugar 1 c. dry red wine or chicken broth 1 can (6oz) tomato paste 1/4 c. red wine vinegar or balsamic salt & pepper In crockpot, combine onions, raisins, garlic, bay leaf and cinnamon stick. Coat pork pieces with flour, then add to crockpot and sprinkle with cumin and sugar.
In small bowl, mix wine, tomato paste and vinegar; pour over pork. Cover and cook at low setting til pork is very tender (7-8 hours). Skim and discard fat, if necessary from stew. Season to taste.
