Coconut-Pecan Sweet Potatoes
2 lbs sweet potatoes, peeled, shredded
1/3 c brown sugar, pack
1/4 c margarine or butter, melt
1/4 c coconut
1/4 c broken pecans, toast
1/4 t ground cinnamon
1/4 t coconut flavoring
1/4 t vanilla
toasted coconut, optional
In a 3-1/2 qt slow cooker, combine potatoes, sugar, margarine,
coconut, pecans and cinnamon. Cover; cook on LOW for 6 to 8 or on
HIGH for 3 to 4 hours. Stir in coconut flavoring and vanilla.
Sprinkle with toasted coconut if desired.
