Sweet Sour Meatballs

Sweet and Sour Meatballs
1 pound ground chuck 1/2 tsp salt 1/4 tsp pepper 1/2 cup chopped fine onion 1 cup oatmeal
1/2 cup brown sugar 1/4 cup lemon juice 1 can (10 oz.) Campbells tomato soup
Mix hamburger, salt, pepper, onion and oatmeal. Make into balls about 1" in diameter. Do not brown.
For sauce, combine sugar, lemon juice and tomato soup. Pour over meatballs. Cook one of the following ways: Regular crockpot: 2-3 hours on high (This is the best way to do them), a 350 oven for 1 1/2 hours (turn over 1/2 way through) or on top of stove 1-2 hours.
These can be made ahead and frozen raw in their sauce. I have a meatball day ever so often and just make and freeze in bags. I use 3 pounds of meat for a 5 quart crockpot and make 5 batches of sauce. Feeds an army of "suits" of course, you have to cook longer (at least 5 hours on high). We eat these over noodles, mashed potatoes, plain and in sandwiches. If they are frozen, I just plunk them into the crockpot liner the night before.
