Print this Recipe    Zesty Butternut Squash Soup

1 Butternut Squash
2 lbs potatoes (any type)
4 tomatoes
Small handful of fresh mint
1 small jalapeno pepper (deseeded, topped and tailed)
Sprinkle of Cajun seasoning

Peel, dice and deseed the squash
peel, dice the potatoes
dice the tomatoes
add other ingredients to the crock pot and cover amply with water.
Cook on medium for 5 hours (can be left all day)

Allow to cool and blend to a creamy soup in the blender.

Serve hot with a sprig of parsley to garnish and garlic bread.
