Pineapple Icebox 02

Pineapple Icebox Cake
1 1/2 cup powered sugar
1/2 cup butter
2 eggs
1/2 pint whipping cream
1 cup crushed pineapple
1 lb. vanilla wafers
Cream powdered sugar and butter well. Add egg yolks that have been
beaten thick and lemon colored. Then fold in beaten egg whites.
1st layer: 1/2 ground vanilla wafers
2nd layer: batter (sugar, butter, eggs)
3rd layer: pineapple (drained well)
4th layer: whipped cream
5th layer: other half of vanilla wafers
Chill 12-24 hours. Serve with whipped cream, and a cherry on top.
Serves 18.
