Pumpkin Crisp
2 cups pumpkin 1 large can evaporated milk 1 cup sugar 1/2 tsp. cinnamon 3 eggs 1 box yellow cake mix 1 cup pecans, chopped 1 stick margarine, melted & cooled
Mix together pumpkin, milk, sugar, cinnamon and eggs. Spray 9x13 pan with cooking spray then pour above mixture into pan. Sprinkle dry cake mix over mixture. Sprinkle nuts over cake mix and pat down with your hand. Pour margarine over top of nuts. Bake at 350 for 1 hour. This is great like this but if you want to add lots of sweetness you may choose to add frosting: 8 oz. cream cheese, 3/4 cup cool whip and 1/2 cup confectioners sugar. We prefer it without frosting.

I tried this for our Labor Day picnic and it was a big hit with everyone! We topped it with Redi-Whip, but ice cream would be good also.
