Rhubarb Brown Betty
1 cup flour 1/4 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 3/4 cup sugar 8 Tbsp butter (1/4 lb), chilled/cut in chunks 4 slices firm bread 1 lb rhubarb cut in chunks
Preheat oven to 350 degrees F. Butter a square 9 inch baking dish. Sift flour, sugar, spices into a bowl. Cut the flour pieces into the dry ingredients until it resembles coarse flour. Place 3/4 cup of dry ingredients in bottom of pan. Tear bread into small pieces. Toss bread and fruit together and spread in pan. Top with remaining dry mix. Bake until browned about 35-45 minutes. May be served with cream, custard, or ice cream. Serves 6.
