Soft Lemon Jelly

SOFT LEMON JELLY (serves 4)
1 lemon 400 ml water 60 g sugar 1 3/4 tsp gelatine
Peel five stips of zest fom the lemon, then juice the lemon. Bring water, sugar, lemon zest and juice to a simmer in a saucepan. Whisk in the gelatine until it has dissolved, remove from heat and pour into serving glasses to set. Refrigerate overnight.
