Baked Cheesecake with Caramelised Apples
2 cups finely crushed wine biscuits (approx. 1 packet) melted butter
3 eggs 250g cottage cheese 250g cream cheese 300ml cream 2 Tbs cornflour 125g sugar rind and juice of 1 lemon
2 large apples, sliced 1 Tbs butter 1 Tbs sugar
Combine crumbs and enough melted butter to bind.
Place eggs, cheeses, cream, cornflour, sugar and lemon juice into a blender or food processor and blend thoroughly.
To caramelise the apples, heat butter and saute the apples. When they begin to turn golden, sprinkle on the sugar and cook a further 3 minutes.
Press the crumb mixture into a flan or cake tin. Arrange the apples over the base and pour the cheesecake mix over the top. Bake at 150 C about 1 hour. The cheesecake can be made 2 days in advance.
