Cheesecake-Key Lime
1 1/2 cups graham cracker crumbs 2 tablespoons sugar 1/4 cup unsalted butter, melted and cooled 1 1/4 pounds cream cheese, softened 1/2 cup sugar 1 cup sour cream 3 tablespoons all-purpose flour 3 eggs 3/4 cup key lime juice 1 teaspoon vanilla 1 drop green food coloring, Optional whipped cream, for garnish lime, sliced for garnish mint, sprigs for garnish
Preheat oven to 375 degrees.
In a bowl stir together the crumbs, sugar and butter. Pat the mixture out evenly onto the bottom and 1/2" up the side of a buttered 10 inch springform pan and bake for 8 minutes. Place pan on a rack and let cool.
In a bowl with an electric mixer, beat together the cream cheese and sugar until smooth. Beat in sour cream, flour, eggs, 1 at a time, beating well after each addition, lime juice, vanilla and food coloring, if using. Beat until smooth.
Pour filling into prepared crust and bake in the middle of the oven for 15 minutes. Reduce oven temperature to 250 degrees and continue baking 50-55 minutes, or until center is barely set. Cool on a rack, cover and chill overnight.
Remove from pan and decorate with whipped cream, lime slices and sprigs of mint.
