Little Cheesecakes
2 8-oz pkgs cream cheese 1 cup sugar 2 eggs 1 tsp vanilla 12 vanilla wafers blueberry pie filling
Beat cream cheese medium speed until fluffy. Add sugar. Then add eggs one at a time (make sure first is blended then drop in next one) make sure it is well blended. Stir in vanilla.
Place a vanilla wafer in each paperlined cup in a muffin pan. Spoon in mixture over wafers. Bake for 20 minutes at 350 degrees. Leave in muffin pan. Chill overnight. To serve, spoon about a tablespoon of pie filling on each.

I HAVE MADE THESE EVERY CHRISTMAS PARTY AND OMITTED THEM THE PAST TWO YEARS AND EVERYONE HAS ASKED FOR THEM, THEY ARE THE SIMPLEST THINGS BUT EVERYONE LOVES CHEESECAKE AND I USE BOTH BLUEBERRY AND STRAWBERRYFILLNG TO TOP IT OFF. SOMETIMES I USE CHOCOLATE WAFERS AND THEN CHERRY TOPPING FOR A CHANGE.
