Pumpkin Cheesecake
10 - 12 servings

1 1/3 cups gingersnap crumbs
1/4 cup butter, melted

1 lb cream cheese, room temp
2 cups pumpkin puree
3/4 cup firmly packed brown sugar
2 tsp cornstarch
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp freshly ground nutmeg
1/2 tsp ground ginger
4 eggs

Preheat oven to 350F. Blend gingersnap crumbs and melted butter
in 9" springform pan. Press firmly into bottom and sides. Bake
10 minutes. Cool before filling.

Preheat oven to 350 F. Blend cream cheese, pumpkin puree, sugar,
cornstarch, and spices in a processor or mixer. Beat in eggs one
at a time until mixture is smooth and creamy. Pour into prepared
crust. Bake until tester inserted in center cones out clean, 50
to 55 minutes. Cool; chill at least 4 hours before serving.
