Brown-Bread Ice Cream Makes about 2 pt.
3 oz fresh brown breadcrumbs 3 oz brown sugar 2 eggs, separated 1 tbl sp honey 3/4 pt whipping cream
Heat oven to 375 F or 190 C.
Mix the breadcrumbs and sugar together, spread on a baking sheet, and bake until the sugar has melted and the breadcrumbs have caramelized. Let them cool completely before crumbling them.
Beat the egg yolks and honey in a small bowl.
Whip the egg whites in a small bowl.
Whip the cream in a large bowl.
Stir the egg yolks and honey into the cream. Fold the egg whites into the cream. Stir the breadcrumbs and sugar into the cream.
Freeze for a few hours.
20 minutes before serving, remove from freezer and stand in fridge.
