Coconut Ice

4 cups sugar / 900 g
pinch cream of tartar / 1/8 teaspoon
2 cups coconut / 150 g
1 cup milk / 225 ml
1 teaspoon butter

Put sugar, milk and cream of tartar in a saucepan and bring to the
boil, stirring to dissolve the sugar and wash down the sides of
the pan.

Boil 10 minutes or to the soft ball stage. Remove from the heat
and add butter and coconut. Beat until thick. (If coconut is
cold, this won't take long.)

Put half the mixture in a greased 8 inch (20 cm.) square pan.
Colour the other half with a few drops of red food colour and spread
this over the first half of the mixture. Leave to cool before
cutting into squares.
