Lime and Basil Sorbet

1 cup lime juice (5-6 limes), strained
1 cup water
1 cup sugar syrup (recipe follows)
12 fresh basil leaves, chopped finely

Pour lime juice, water, and sugar syrup into ice cream cannister.
Add chopped basil leaves. Freeze according to ice cream maker
manufacturers directions.


Sugar Syrup

2 lbs superfine sugar
4 cups water

In a large saucepan bring sugar and water to a gentle boil. Reduce
heat until bubbles break surface. Simmer 10 minutes. Remove from
heat; cool before using or storing.
