LIME AND GARLIC GRANITA
Serves 6

2 1/2 cups / 550 ml / 1 pint water
1/2 cup / 100g / 4 oz sugar
3 cloves garlic, quartered
1 1/4 cups / 275ml / 1/2 pt freshly squeezed lime juice
rind of a lime, finely grated (optional)
twists of lime peel

Boil the water, sugar and garlic together for 5 minutes. Strain
and cool. Stir in the lime juice and grated lime peel, and freeze,
stirring from time to time, until granular but still slightly mushy.
Decorate with twists of lime peel and serve with thin shortbread
or langues de chat.
