Melon Sorbet
3/4 cup water. 3/4 cup sugar. Make simple syrup.
Add 4 ice cubes to cool.
Take one ripe canteloupe and strip out the flesh with a melon baller or what have you.
Put in to food processor, with 2 tablespoons lemon juice and the syrup, plus a nice pinch of ground cinnamon.
Pulse to a rough slush, then put all into sorbet maker.
Let come to proper frozen consistency, serve with appropriate biscotti and maybe a really nice fruity wine, like maybe a Gewurz, or maybe a delightful Spatlese.
