White Peach Sorbet

1 pound white peaches, peeled, sliced (or substitute canned peaches, drained)
juice of 2 lemons
3/4 cup sugar
1 tablespoon peach brandy

Puree the peaches with the lemon juice, sugar and 1/2 cup water.
Remove to a bowl. Add the peach brandy and freeze the sorbet, using
either an ice cream machine or the freezer method. Serve this sorbet
in champagne glasses along with a delicate cookie.

Serves 4

This is a really yummy, pretty easy solution for the dozens of peaches that come off my backyard tree all at the same time. I will save it for next year!
