Pear Sorbet
2 pounds very ripe pears 3 tbsp lemon juice 6 tbsp sugar 1/2 cup good quality dessert wine such as Essencia 1 tbsp pear brandy (optional) 1/16 tsp cardamom 3/4 cup water
Dissolve sugar in water over low heat. Peel and core pears, add to sugar syrup. Cook for 8 to 10 minutes, or until pears are soft. Place the pears and syrup in a blender or food processor with the rest of the ingredients.
About 30 minutes before serving, freeze in an ice cream maker. This may be cooked in microwave. Dissolve part of the sugar in 1/4 cup of the water, add the rest of the sugar when the pears are cooked.
Notes: You might consider powdered ginger instead of cardamom, but I'd increase the amount to at least double (I like ginger). This would look and taste great if it was served in small chocolate shells.
