Straw Mango Ice

Strawberry Mango Ice 1/2 c. water 1/4 c. corn syrup (if mango is really ripe, this can be omitted) 1/4 c. honey 3 T. Tequilla 2 c. Strawberries (partially frozen) 1 c. cubed mango (about 1) 1 T. lime or lemon juice Sugar to add if needed In sauce heat combine first 4 ingredients and stir until corn syrup and honey are dissolved, do not boil. Only takes a few minutes. Put aside to cool. (This is called the sweetened mixture.)
Blend strawberries, mango, and lemon juice in blender or food processor until smooth. Add sweetened mixture to fruit mixture and process until smooth. Taste and add sugar by tablespoon if needed.
Pour into a 9 inch square baking pan and freeze for 2 hours or until firm. Cut into cubes and put in processor and whirl until smooth.
Place into air tight storage container and freeze up until 2 months.
For Blueberries/Blackberry ice substitute 2 c. blueberries for strawberries and 1 c. blackberries for the mango.
