8 c. peeled, seeded, chopped watermelon
1-1/2 tbsp. lime juice
1 c. sugar or honey (or to taste)
Place watermelon in colander over large bowl. WIth large spoon,
mash pulp against sides of colander, trying to extract as much
juice as possible. Reserve pulp, removing seeds. Combine juice,
lime juice, and sugar in saucepan and bring to boil. Simmer 15
minutes. Let cool, then stir in pulp.
Pour into large shallow pan and freeze. Stir every hour to break
up ice crystals. Before serving, puree briefly until smooth, then
spoon into chilled bowls.
