BANANA PUDDING

2 oz butter
2 eggs, separated
2 oz flour
2 bananas
3 gills milk
1 tsp castor sugar
2 oz sugar

A gill of milk = 1/4 pint

Place butter in a saucepan and melt the butter, add by degrees,
the flour, then the milk, and let all boil a few minutes, stirring
well. Take from the fire and add 2 ozs sugar, the yolks of eggs,
and the bananas cut into small pieces, Place all in a pie dish
and bake 20 minutes. Whisk the egg whites to a stiff meringue,
add the castor sugar and beat well. Place roughly on the pudding
and return to the oven for a few minutes until the meringue is
light brown.

Serve it swimming in cream.
