Creme Brule

7 egg yolks
1 cup milk
vanilla (sugar or extract)
3 1/2 cup cream
7/8 cup sugar
brown sugar, for topping

Beat the eggs, sugar and vanilla, than add the milk and cream and
mix well. Let it stand for an hour. Skim off any foam that is
still present. Fill the "cassolettes" (shallow dishes about 5
inches in diameter and an inch deep), place them in a pan of hot
water in a 325-350 oven and bake 25 to 30 minutes. The custard
will be set but trembly, but it will solidify further in the
refrigerator. Once it is thoroughly chilled, sprinkle the surface
of each custard with brown sugar, heat a caramelizing iron on the
stove and caramelize the surface of each.
