Golden Syrup Pudding
3 tablespoons golden syrup 125 g (4 oz) butter 1/2 cup castor (superfine) sugar 1 teaspoon vanilla 2 eggs 1 1/3 cups self-rising flour 1/2 cup milk
Grease a small pudding basin with butter. Pour syrup in the bottom. Cream butter, sugar and vanilla. Beat in eggs, fold in flour, then stir in milk. Add the pudding mixture to the basin on top of the golden syrup. Cover top of basin with two sheets of foil, greasing the inside of the foil so it does not stick. Tie with string and lower into a pot of boiling water, so that the water comes halfway up the sides of the basin. Cover and simmer for 1 1/2 hours. Remove basin and let stand a few minutes before turning out. Serve with a pouring custard.
