Noodle Pudding 05

Noodle Pudding Yield: 10 to 12 servings
1 pound package broad egg noodles 1 stick (1/2 cup) butter or margarine 1/4 cup sugar 2 large eggs, slightly beaten 1/2 teaspoon cinnamon or to taste 2 Winesap apples 2 pears 1/2 to 1 cup orange juice Juice of + lemon 1/2 to 1 cup raisins
Cook the noodles in boiling salted water for 10 minutes. Drain and rinse with cold water.
Add the margarine or butter to the noodles and mix until melted. Add the sugar, eggs, and cinnamon. Grate the apples and pears and add with the juices and raisins. Mix gently.
Pour into a greased 9 x 13 x 2-inch rectangular casserole. Bake in a preheated 325 degree oven for 1-1/2 hours to 2 hours, depending upon the degree of crustiness desired. Serve warm or cold as a side dish with turkey, chicken, or brisket.
