Lokshen Kugel (noodle pudding)

4 cups cooked wide egg noodles
3 eggs
1/2 cup mixed dark and golden raisins (more to taste)
1/2 cup slivered almonds
4 tbs. brown sugar
1 tbs. lemon juice
1/8 tsp. nutmeg
3 tbs. melted butter or margarine
bread crumbs

Preheat the oven to 375 degrees.

Beat the eggs and brown sugar together. Add the lemon juice,
raisins, almonds, nutmeg, and butter and mix well. Combine the
mixture with the noodles, and pour into a well-greased baking pan
(8" x 8" for thick kugel, 8" x 12" for thinner). Sprinkle bread
crumbs on top. Bake for 45-50 minutes (until the top is golden
brown). Can be served warm but is delicious cold too! Warning:
this stuff is addictive.
