Noodle Pudding Supreme
Serves 6

8 oz medium noodles, cooked and drained
4 eggs, separated
1/2 c sugar
8 oz cream cheese
1 pint sour cream
1-1/2 c milk
1 #2 can crushed pineapple (probably about 12-14 oz)
1/2 stick butter

1/4 c cornflake crumbs
1 tsp sugar
1/4 tsp cinnamon

Combine egg yolks, sugar, cream cheese, sour cream, and milk. Fold
boiled noodles into sauce. Stir in drained pineapple and stiffly
beaten egg whites. Melt butter in a 1-quart baking dish; pour in
mixture and bake at 300F for 1 hour, then at 350F for another 1/2
hour. Topping can be sprinkled with cornflake crumbs, sugar, and
cinnamon before baking, if desired.
