Noodle Pudding
Yield: 4 to 6 Servings

1/2 pound broad noodles
2 cups cottage cheese
2 cups milk
1/3 cup butter or margarine, melted
2 teaspoons cinnamon
1/2 cup plus 2 tablespoons sugar
3 large eggs
1 teaspoon salt
1 cup sour cream or yoghurt
1/4 cup raisins
1/4 cup dried apricots or other dried fruit
1/4 cup slivered almonds

Cook the noodles according to the directions on the package and
drain.

Combine the cottage cheese, milk, butter or margarine, 1 teaspoon
cinnamon, + cup sugar, eggs, salt, sour cream or yoghurt, raisins,
and apricots. Fold in the noodles.

Place in a greased 9 x 12-inch casserole.

Sprinkle with the remaining teaspoon of cinnamon and 2 tablespoons
sugar. Cover with almonds.

Bake in a preheated 350-degree oven for 45 minutes to one hour or
until firm. Serve as a side dish with a fish or dairy meal or as
a dessert.
