Buttermilk Panna Cotta
3 leaves sheet gelatin or 1 packet gelatin granules 1 cup heavy cream 1/2 cup sugar 2 cups buttermilk
Soften gelatin in cold water. Heat cream with sugar until sugar dissolves. Squeeze gelatin, add to warmed cream and stir until gelatin dissolves. Add buttermilk and stir well. Strain mixture through a fine sieve and pour mixture into ramekins. Chill until firm, about 4 hours.
To serve: Run a knife around the edges and invert panna cotta onto a serving Plate. Top with fresh fruit like sliced strawberries, mangoes, peaches or nectarines.
Note: For a softer, creamier texture, use 2 1/2 sheets of sheet gelatin or 1 package less 1/2 teaspoon of granulated gelatin. The resulting mixture will be a little less firm and more difficult to remove from a mold, but tastier and silkier.
